Increase your lean muscle mass rather than bodyfat, unless you are having problems with your periods (this comes when you go lower than about 15% bodyfat).
The cholesterol side of the picture is complex; they're finding out new stuff about cholesterol all the time and nothing is ever clear cut. Vegetable sources of fat would be the best for you, especially olives, olive oil, avocadoes, and virgin coconut oil, but even if you avoid stuff like red meat, if you are genetically predisposed to high cholesterol, you will have difficulties getting rid of it, even if you do the right things. One thing you can't go wrong with though, is oatmeal. Lots of oatmeal.

If I was gonna cook ...
If I was gonna cook I would have diced tomatoes, onions, the mushrooms, and SAUTED first. Then cook the chicken (perhaps bread it) and then cook both the veggies and the chicken for about a min to make sure everything is hot. Spices: salt, black pepper, and basil.
---You can eat it like that or put it on top of spaggeti / noodles / etc ---

the meal is ...
the meal is actually very healthy, sure it has quite a bit of oil, but again, at least its olive oil, it has essential fatty acids which is good. the chicken itself is pretty low calorie, and the veggies has near no callories. its ok to use a higher than usual ammount of fat in food in you arent eating carbs, a fat + protein meal is exellent and healthy (as long as its healthy fat of course :) , such as olive oil )
